Chocolate Chip Cookies: Easy To Make & The Ultimate Comfort Food

Today is National Chocolate Chip Cookie Day. Though in my house Chocolate Chip Cookie Day is everyday of the year (which explains why everything is fitting so tight these days).

Chocolate Chip Cookies are my weakness. Not only do I bake them, I have to buy them EVERY TIME I see one in a bakery. I’m forever on the hunt for the perfect chocolate chip cookie: crispy on the outside and chewy in the middle.

These delicious little creatures that bring comfort and joy to my life were first created in 1930 by Ruth Wakefield at the Toll House Inn in Whitman, Mass., when she dropped pieces of chocolate into her butter cookie batter thinking they would melt when baked. They didn’t, and the rest is history. (Read the story in the L.A. Times here.)

Some of my favorite homemade chocolate chip cookie recipes were created by Nestle Toll House and Ina Garten of Barefoot Contessa.

So get your baking sheets out and get busy!

    Must you give me a reason to eat my favorite food group, the chocolate chip cookie? I also really like the quaker house oatmeal cookie recipe – I just add in heaping handfuls of chocolate chips and raisins — my waist is history.

    Ahh…the way to a man’s heart is through his stomach. When I first met my husband, Mrs. Fields won his heart over. Now I must say it is our daughter’s original low-fat recipe that he craves. Shall I share?

    Here’s the Recipe (she is willing to share)

    HEALTHFUL CHOCOLATE CHIP COOKIES

    1 cup flour
    1 cup oat bran
    1/4 cup truvia
    1/2 t. salt
    1/2 t. baking soda
    2 egg whites
    1 tsp. vanilla
    1/2 cup sugar free apple sauce
    1/2 cup mini chocolate chips Bake at 375 degrees for 10 minutes only

    Here’s my daughter’s recipe. Scoop batter into small balls and bake at just 375 degrees for 10 minutes.
